LITTI CHOHA-A CULTURAL,TASTY AND HEALTHY FOOD OF NORTH INDIA
Litti Chokha is a traditional Bihari dish, which is especially popular in Bihar, Uttar Pradesh, and Jharkhand. The special thing about the taste of Litti Chokha is its simplicity and freshness. Here’s the recipe for making Litti Chokha.
Ingredients for Litti:
- Flour (Atta) – 2 cups
- Semolina (Sooji) – 2 tablespoons
- Roasted Gram Flour (Sattu) – 1 cup
- Green Chilies – 2-3 (chopped)
- Ginger – 1 inch (chopped)
- Cumin Seeds (Jeera) – 1 teaspoon
- Carom Seeds (Ajwain) – ½ teaspoon
- Turmeric Powder (Haldi) – ½ teaspoon
- Fresh Coriander – 1 tablespoon (chopped)
- Lemon Juice – 1 tablespoon
- Salt – to taste
- Ghee – 1-2 tablespoons
Ingredients for Chokha:
- Eggplant (Baingan) – 1 (medium-sized)
- Tomatoes – 2
- Potatoes – 2 (boiled)
- Green Chilies – 2-3 (chopped)
- Garlic – 5-6 cloves (chopped)
- Fresh Coriander – 1 tablespoon
- Cumin Seeds (Jeera) – 1 teaspoon
- Salt – to taste
- Mustard Oil – 1-2 tablespoons
Method to Make Litti:
- First, mix flour, semolina, salt, and a little oil together.
- Now, add water and knead into a soft dough, then cover it and let it rest for 15-20 minutes.
- In the meantime, prepare the stuffing by mixing roasted gram flour (sattu) with chopped green chilies, ginger, cumin seeds, carom seeds, turmeric powder, fresh coriander, and lemon juice. Add a little water to make a smooth paste.
- Now, divide the dough into small portions and roll them into small balls. Make a small indentation in each ball and stuff it with the prepared sattu filling. Seal the dough around the filling.
- Heat ghee in a pan and fry these stuffed littis. You can also cook them in a tandoor or oven, but frying them in ghee enhances the taste.
- Fry the littis until they are golden brown and crispy.
Method to Make Chokha:
- Roast the eggplant (baingan), tomatoes, and boiled potatoes on a flame or in a tandoor.
- Once they are roasted well and their skin is charred, let them cool.
- Peel the skin off the roasted vegetables and mash them finely using a mixer or by hand.
- Now, add chopped green chilies, garlic, fresh coriander, cumin seeds, and salt to the mashed vegetables. Mix everything well.
- Drizzle mustard oil on top to enhance the flavor and your chokha is ready.
Serving Method:
Serve the hot littis with chokha. You can also add ghee on top to enhance the flavor.
